Honey Lime Chicken.

A new recipe, that is actually healthy for you, and tastes amazing. Yup. I've got it right here. If you like lemon and orange chicken from Chinese restaurants you will love this, I promise. It is so easy I think it actually takes less time than ordering in, or buying those pre-made packages in the grocery store.
For some reason I thought that Honey Lime Chicken would be a Mexican tasting dish, I don't know why, especially with Soy Sauce right there in the ingredients, but I did. So I made a modified Mexican rice to go with it. That was not so tasty, Mexican rice and a sweet tart oriental chicken... never a good thing. Oh well.

Honey Lime Chicken
from Blood Types, Body Types and You
1/2 tsp. garlic powder
4 boneless skinless chicken breast halves
1/3 c pineapple juice.
1/4 c honey
1 tsp lime zest
3 Tbsp fresh lime juice
2 Tbsp Soy Sauce
2 tsp corn starch

1 ~ Sprinkle garlic powder over chicken, let sit while you prepare sauce. In a small bowl whisk together pineapple juice, honey, lime zest, lime juice, and soy sauce until well mixed.



2 ~ Brush Chicken with sauce. Heat large nonstick skillet ti medium heat. Cook each piece of chicken 5 min on each side or until done.
3~ Bring leftover marinade/sauce to a boil. Lower to simmer for 2 min. Add cornstarch and whisk in to thicken. Pour over chicken.

DD's notes ~ If I were to make this again I would either serve it with plain rice or over rice noodles. I would serve a green veggies stir fry with it, snow peas, broccoli, bell pepper, and green onions.
